Chicken Fried Rice

Fried rice is one of my favorite fall back meals. It’s usually a meal that I throw together when I don’t have a meal prep. It doesn’t take very long and it is always delicious, especially when topped with a runny fried egg and avocado—my two favorite things.

Cook one and a half cups of frozen veggies to the package directions. Dice one red bell pepper and sauté in one tablespoon of avocado oil in a cast iron pan. Dice one pound of boneless, skinless chicken breasts into one inch cubes. In a large sauté pan or cast iron pan, sauté chicken in a tablespoon of avocado oil until lightly browned and cooked through. Add one tablespoon of gluten free soy sauce to pan with chicken and a healthy squirt of Sriracha. Add veggies and peppers to chicken as well as one and a half cups of cooked rice (brown or white). Mix together. Add one to two more tablespoons of gluten free soy sauce, to taste. Mix in a teaspoon of garlic powder and a teaspoon of black pepper. Make a hole in the middle of the rice mixture, crack two eggs into hole and scramble. Once mostly scrambled, combine entire mixture in pan.

Top with half an avocado and a fried egg.

Chicken Fried Rice

Gluten Free/Dairy Free

Makes approx. 4-6 servings

Ingredients:

  • 1 lb. boneless, skinless chicken breasts

  • 1 red bell pepper, diced

  • 2 tbsp avocado oil

  • 1.5 cups frozen veggies

  • 3 tbsp GF soy sauce

  • Sriracha

  • 1.5 cups cooked rice, brown or white

  • 1 tsp garlic powder

  • 1 tsp black pepper

  • 2 eggs

  • avocado and eggs for topping

Directions:

  1. Cook frozen veggies to the package directions.

  2. Sauté diced pepper in one tablespoon of avocado oil in a cast iron pan.
