Hidden Veggie Zucchini Brownies

While it’s not a requirement to add veggies to your brownies by any means, it’s a great way to hide them if you’re like me and hate them! I was feeling a bit down when I whipped up this recipe and oh boy, did these turn my mood around.

Begin by shredding two small zucchinis. Add shreds to towel or cheesecloth and squeeze out all the juice from zucchinis. Preheat the oven to 350 degrees. In a food processor, add zucchini shreds, a 15 oz. can of black beans (drained and rinsed), a third cup of avocado oil, a third plus a fourth of a cup of cocoa powder, two thirds of a cup of maple syrup, three quarters of a teaspoon of baking powder, and two eggs. Blend together until smooth. Pour into bowl and mix in about a cup of dairy free chocolate chips —this is always a personal choice for how many you want to add!

Pour batter into a parchment lined 8x8 baking pan. Bake at 350 for 35-45 minutes. Let cool and enjoy.

Store in fridge.

  • 2/3 cup maple syrup

  • 3/4 tsp baking powder

  • 2 eggs

  • 1 cup dairy free chocolate chips
