Mason Jar Ramen
I mean who doesn’t love ramen and who doesn’t love an easy portable mason jar? Plus mason jar meals are just so IN right now. So here is my soup-er easy Ramen in a Jar recipe!
Gather your mason jars and place them on the counter without their tops. Add three quarters of a tablespoon of gluten free soy sauce to each jar. Top that with enough broth (of choice - veggie, beef, or chicken) to fill a third of the jar. Depending on your types of noodles, cook according to the package or until they separate. Portion out the noodles into each jar.
For the toppings - I liked to added shredded chicken —you can poach the chicken and shred it or use rotisserie chicken, carrots, spinach, green onions, and sesame seeds. Using a mandolin or veggie peeler, shave your carrots into long peels. In a medium frying pan, heat a tablespoon of olive oil. Add shaved carrot peels and spinach to oil and sauté until soft. Add a splash of soy sauce and some all purpose seasoning and mix. Once the carrots are soft and have absorbed the soy sauce, let cool.
Add first chicken, then carrots and spinach, then green onions, and finally sesame seeds to jars.
Cover with lids and store in fridge up to 5 days. When ready to eat, add water or broth until ingredients are covered and microwave 1-2 minutes. Or can pour contents into a bowl with broth and reheat.

Makes as many servings as you choose (roughly 3-6 with veggie ingredients)

GF Soy Sauce - 3/4 tbsp per serving, plus 1 tbsp for carrots
Broth (Beef, chicken, or veggie) - roughly 1/3-1/2 cup per serving
Ramen noodles of choice
shredded chicken (rotisserie or poached and shredded)
2-3 large carrots
1/2 to 1 bag of spinach
green onions
sesame seeds
1 tbsp olive oil
