Slow Cooker Chicken Taco Soup

For some reason Chicken Taco soup really just hits the mark every. single. time! It’s hearty, easy to make, and full of spice. It’s the perfect compliment to a meal prep or can be made for your family dinner. I like to pair this meal with my “homemade” tortilla chips and most obviously, a lot of avocado.

This is the kind of meal you may have many of the ingredients in your pantry and will only need to run out for one or two things, depending on the size of your pantry. When I first started making this recipe, I lived in a tiny 400 sq. ft. house in Galveston, TX. My kitchen was so tiny and I had so little counter space I always had to get very creative with my cooking. Half the time I had to cook slow cooker meals on the floor! (I also learned I couldn’t leave the slow cooker on over night because I could reach into the kitchen from my bed and the whole house would smell like whatever I was cooking and I couldn’t fall asleep because I got hungry!)

So while MY pantry and fridge did not hold these ingredients and I would grocery shop every week for all my food, your’s might! It’s pretty much a dump recipe. 1 of everything and just dump it in, stir, cook and eat! I like to cook with black beans, but you could use whatever beans you like. So 1 15 oz. can of black beans, 1 of corn (I happened to have frozen corn and that works just as well), 1 32oz. can of diced tomatoes, 1 packet Taco seasoning, 1 can of salsa of choice—I usually choose a medium or spicy to add a little heat, or the black bean and corn, 1 carton of chicken broth, and chicken breasts. You can also squeeze a little lime juice in for some acidity.

Just dump everything into the slow cooker, turn on high for three hours or low for six. If you’re doing this as a meal prep, I suggest dumping everything in and doing all the rest of your prep or something else for a couple hours so it finishes when you need it to. Once the timer dings, use two forks to shred the chicken and mix into the soup. Top with whatever goodies you like, chips, tortilla strips, avocado, cheese, or sour cream, and enjoy!

Slow Cooker Chicken Taco Soup

Gluten Free/Dairy Free

(Makes roughly 4-7 servings, depending on how Hungry Hungry you are!)

Ingredients

  • 1 15 oz. can of black beans (drained)

  • 1 15 oz. can of corn (drained)

  • 1 32 oz. can of diced tomatoes

  • 1 jar of salsa

  • 1 carton chicken broth

  • 1 packet Taco Seasoning

  • 1 - 2 lbs of chicken breasts (depending on how many you’re feeding)

  • Juice of 1 lime

Directions:

  1. Dump all ingredients into slow cookers.

  2. Stir so everything is mixed together.

  3. Set slow cooker on high for three hours or low for six.

  4. Go watch some Netflix, meal prep your other meals, or walk around your neighborhood.

  5. At the ding, shred the chicken into the rest of the soup.

  6. Top with delightful goodies of choice: avocado, sour cream, cilantro, tortilla chips or strips, extra lime juice.

  7. Fill up your Hungry Hungry belly!
