Coconut Lime Chia Pudding
“She put the lime in the coconut, she [ate] 'em bot' up”
But in all reality, this chia pudding is STUPID good. I threw it together for a meal prep and it turned out totally bomb. I’d been wanting to make a chia pudding for a while and while scrolling through recipes, I couldn’t find one that I liked. So I decided to create my own!
Now when I make anything with citrus, I’m likely to go completely overboard with the citrus flavor. I think this stems from my childhood when my grandmother would make Lemon Meringue Pie or Key Lime Pie and would add extra lemon or lime for the flavor to pack a punch. There’s really nothing like eating a lemon or lime pie or lemon squares and having only a pathetic hint citrus flavor. That flavor should hit you in the face and get you in the back corners of your mouth…at least in my opinion! That being said, I did counteract the lime in this recipe with maple syrup and it gives the perfect sweet and sour combo.
This recipe is a quickie in preparation, though does require an overnight refrigeration process. You’ll first need to juice and zest three limes. When I made this the first time I didn’t have a microplane zester (mine is in storage) and it was hilarious trying to zest limes with a regular box grater, but I made it work! So you’ll juice and zest the limes into a bowl, add one and a half 15oz. cans of unsweetened lite coconut milk, four tablespoons of maple syrup, and eight tablespoons of chia seeds.
Mix it all together and scoop or pour into your storage containers. Refrigerate at least twelve hours for optimal gelatinousness. You can also add extra chia seeds if you want it to be thicker. Then once solidified, top with tasty yumminess!
Coconut Lime Chia Pudding
Gluten Free/Dairy Free/Refined Sugar Free
(makes roughly 5 servings)
Ingredients:
juice and zest of 3 limes
4 tbsp maple syrup
1.5 15 oz. cans of unsweetened lite coconut milk
8 tbsp chia seeds
whatever toppings you choose
Directions:
Juice and zest 3 limes.
Add maple syrup and coconut milk to lime juice and zest. Stir until combined.
Add chia seeds to mixture. Stir until combined.
Pour into containers of choice.
Refrigerate 12 hours or longer.
Top with goodies!
