My Go-To Turkey Meatballs

There’s nothing better than a great meatball. They’re poppable for snacks, an excellent addition to a bento box lunch, or can be added to various dinners. I absolutely love meatballs and love adding them to my meal preps or just cooking them for a meal with friends.

This recipe is made with ground turkey, but you could easily substitute any other type of ground meat that you so choose. This is the basic of the basic recipe, but I have a tendency to adapt it, add sauces, various spices, stuff them with “cheese,” etc. You do you! You can take this recipe and spice it up however you like.

While meatballs are delicious, being gluten free sometimes it can be hard to find them anywhere but my own kitchen! Typically breadcrumbs are used as a binder to hold the meat together, along with egg, which makes them yummy, but full of gut-busting gluten. When I make them I either use gluten free breadcrumbs or more likely have a tendency to grind up whatever gluten free crackers or cereal (usually Rice Chex) I have in my cabinets.

In a bowl, mix together one pound of lean ground turkey (or your ground meat of choice), 1/2 cup of gluten free “breadcrumbs", one egg, 1/2 a yellow onion minced, 1 tbsp of your favorite seasoning, a pinch of salt and pepper. This is also where you can add some cilantro, parsley, garlic, etc., to really spice them up! Roll into 1 inch balls. Usually makes about 16-20 meatballs

Bake at 350 degrees for 20 minutes. Snack on at least two of them while they cool. Enjoy!


Turkey Meatballs

Gluten Free/Dairy Free

(Makes roughly 20 meatballs)

Ingredients:

  • 1 pound ground turkey

  • 1/2 cup gluten free breadcrumbs

  • 1 egg

  • 1/2 yellow onion minced

  • 1 tbsp seasoning of choice

  • pinch of salt

  • pinch of pepper

Directions:

  1. Preheat oven to 350 degrees.

  2. Line baking sheet with parchment paper.

  3. Mix all ingredients together in a bowl.

  4. Roll 1 inch balls and place on prepared baking sheet.

  5. Bake for 20 minutes.

  6. Time for your Hungry Hungry side to grab a snack! Cool completely and store in airtight container or enjoy right away.
