Beef & Veggie Slow Cooker Stew
During the colder months, stews, soups, and chilis can always be found in my meal preps. They’re also great to make for family meals. But, since I don’t have a family yet, they always end up in containers in my fridge just waiting to be consumed for lunch or dinner. This broad category of food is also one that I don’t follow recipes for. You’ll notice I rarely follow recipes and tend to create my own. I love hoping for the best and then having my food turn out really well!
I’d never attempted a beef stew before, this was the first. I don’t cook with beef that often, mainly because it’s more expensive than chicken and turkey. Especially because I only use grass fed beef. I made this stew during the month of December, craving something warm—despite the fact that I lived in Texas at the time and it didn’t really get cold there.
Start off by lightly searing a pound of beef tips. I think I accidentally over cooked these at this stage and it made the beef tougher at the end, so be sure only to brown the outside of the tips. Add to slow cooker with three large diced carrots, three diced celery stalks, four medium diced red potatoes, and one diced red pepper. That’s the veg. Now add a 28 oz. can of diced tomatoes, six cups of beef stock, and a half cup of tapioca starch. Finally, add your spices—I also rarely measure spices—salt, pepper, oregano, two bay leaves.
Stir together and cook on high for 4 hours or until potatoes and carrots are soft. Serve with diced avocado and gluten free toast, or whatever the heck you want.
Beef and Veggie Slow Cooker Stew
Gluten Free/Dairy Free
(Makes approx. 5 servings)
Ingredients:
1 lb. beef tips
3 large carrots, diced
3 celery stalked, diced
4 medium red potatoes, diced
1 red bell pepper, diced
1 28 oz. can diced tomatoes
6 cups beef stock
1/2 cup tapioca starch
2 bay leaves
1 tsp. salt
1 tsp. pepper
1 tsp. oregano
Directions:
Lightly sear beef tips. Add to slow cooker.
Dice veg and add to slow cooker with all remaining ingredients.
Stir until combined.
Cook on high 4 hours or until potatoes and carrots are soft.
Serve with your favorite additions.
