Beef Chipotle Slow Cooker Chili
Most of my chilis are well seasoned, but not always spicy. Another experiment, this recipe turned out amazingly well. I love chili, never follow a recipe, and rarely cook the same one twice. Beef chili is hard to say no to, that flavor from the beef really elevates it, even though I usually make turkey chili.
But deviating from my usual, I wanted to spice things up! I made this recipe at the start of 2018 and decided that for the new year, it was time for a new chili. The slow cooker is my favorite way to make chili, also because I don’t have any good pots for stovetop chili. *sigh* Someday.
Firstly, you’ll dice a red pepper and a medium yellow onion and sauté in a little olive oil on medium heat. Add one pound of grass fed ground beef and cook until done, as soon as the beef is no longer pink add one teaspoon of chili powder. Add to slow cooker. Top with three cans beans of choice, be sure to drain first, one 14 oz. can of tomato sauce, and a 28 oz. can of diced tomatoes with the juice. Finally, add three minced chipotle peppers. Season with chili powder, paprika, oregano, salt, and pepper. Cook on high for 3-4 hours. Serve with your favorite toppings. As usual mine are avocado and tortilla chips.
Beef Chipotle Slow Cooker Chili
Gluten Free/Dairy Free
(Makes approx. 5-7 servings)
Ingredients:
1 medium yellow onion
1 red bell pepper
1 lb. grass fed ground beef
1 tsp. olive oil
1 tsp. chili powder
3 15 oz. cans beans of choice, drained
1 14 oz. can tomato sauce
1 28 oz. can diced tomatoes with juice
3 minced chipotle peppers
1 tbsp. chili powder
1 tsp. paprika
1 tsp. oregano
1 tsp. salt
1 tsp. pepper
Directions:
Dice and sauté onion and pepper on medium heat in olive oil. Add ground beef. When no longer pink add 1 tsp. chili powder, cook 1 minute longer.
Add beef mixture to slow cooker. Add remaining ingredients.
Cook on high for 3-4 hours.
Serve with your favorite toppings.
