Protein Energy Bites

Treats are very important to me. The Treat Yoself mentality is alive and well here. But I also typically choose to treat myself with goodies that are unprocessed, refined sugar free, and not going to give me a sugar rush or crash. One of these is my Protein Energy Bites. They’re small, but give you the little boost you need. I love making them for meal preps.

I love this recipe because it’s pretty quick and easy, though a little messy! And some of the items most likely can be found in your pantry. In a bowl, mix together a half cup of gluten free rolled oats (I use Bob’s Red Mill), two scoops of Vegan protein (I used MRM Veggie Elite Chocolate), a quarter cup of unsweetened coconut flakes, and two tablespoons chia seeds. In a separate small bowl, melt a half cup of sunbutter or nutbutter of choice in the microwave. Add a third of a cup of honey to this melted mixture. Stir into dry mix. Once combined add a third of a cup of mini dairy free chocolate chips (I used EnjoyLife Foods). Mix with hands until thoroughly combined. Roll into 1 inch balls and store in fridge. Would also be great with a bit of coconut on the outside. Just roll the bites in a bowl of flakes. They are poppable, great for post-workout snack, or for a sweet treat in your meal preps.

Protein Energy Bites

Gluten Free/Dairy Free/Refined Sugar Free

Ingredients:

  • 1/2 cup gluten free rolled oats (Bob’s Red Mill)

  • 2 scoops vegan protein powder (MRM Veggie Elite Chocolate)

  • 1/4 cup unsweetened coconut flakes

  • 2 tbsp chia seeds

  • 1/2 cup melted Sunbutter or nutbutter of choice

  • 1/3 cup of honey

  • 1/3 cup of mini dairy free chocolate chips (EnjoyLife Foods)

  • Extra coconut flakes for rolling

Directions:

  1. Mix together all dry ingredients in a bowl except chocolate chips.

  2. Melt sunbutter/nutbutter until easily pliable.

  3. Add sunbutter & honey to dry mix. Mix to combine.

  4. Add chocolate chips to mixture and use hands to combine thoroughly.

  5. Roll into 1 inch bites. Optional rolling in coconut flakes.

  6. Refrigerate 1 hour for hardening. Store in fridge.

  7. Your hungry hungry belly is growling, I can hear it! Treat it!
