Double Dark Chocolate Chip Cookies

My pantry is always full of dark chocolate and dead bananas. Especially during quarantine. I can never manage to eat the bananas I buy in a timely manner. But, that makes for good recipe testing!

These Double Dark Chocolate Chip cookies are probably one of the favorites I’ve ever made. Super easy, healthy, and absolutely delicious. A great dessert or mid-afternoon snack.

The best part about these cookies…it’s a “choose your own adventure” in terms of sizing! I’ve made them both big and small, I prefer big. Same cooking time for any size so it seems!

Begin by preheating the oven to 350 degrees and lining a baking sheet with parchment paper. In a bowl, mash two dead (read: brown, old) bananas until smooth. Add to the bowl one and a half cups of gluten free oats (I use Bob’s Red Mill Gluten Free Quick Oats), two eggs, a quarter cup of creamy peanut butter (make sure the ingredients are just peanuts and salt!), four tablespoons of dark chocolate cocoa powder, and a half teaspoon of salt. Mix until combined. Add in a cup of dark chocolate chips (I use Enjoy Life Food’s brand) and mix until just combined.

Using an ice cream scoop, scoop dough onto baking sheet. The cookies will not expand as they bake, so I use my fingers to spread the dough flat. You can choose the size! I found big cookies to be better since I eat them more as a snack, but I’ve made them both big and small. Bake for 12 minutes.

Double Dark Chocolate Chip Cookies

Gluten Free/Dairy Free/Refined Sugar Free

Makes 8-12 cookies

Ingredients:

  • 2 dead bananas

  • 1 1/2 cups gluten free oats (I use Bob’s Red Mill GF Quick Oats)

  • 2 eggs

  • 1/4 cup creamy peanut butter

  • 4 tbsp dark chocolate cocoa powder

  • 1/2 tsp salt

  • 1 cup dark chocolate chips

Directions:

  1. Begin by preheating the oven to 350 degrees and lining a baking sheet with parchment paper.

  2. In a bowl, mash dead bananas until smooth.

  3. Add to the bowl the rest of the ingredients except chocolate chips. Mix until combined.

  4. Add in a cup of dark chocolate chips (I use Enjoy Life Food’s brand) and mix until just combined.

  5. Using an ice cream scoop, scoop dough onto baking sheet.

  6. Use fingers to spread the dough flat. (You can choose the size!)

  7. Bake for 12 minutes.

  8. Let cool on baking rack.

  9. Store in fridge or freezer.
