Bolognese Soup
When I set out to make this soup I originally thought it was going to be a Ground Turkey and Tomato Soup, once it had finished cooking I had a taste and realized it tasted exactly like Bolognese…So Bolognese Soup it is! Incredibly creamy and delicious with veg and ground turkey.
Start by sautéing one pound of ground turkey in a large soup pot (preferably cast iron or a dutch oven). Add a diced pepper and two medium tomatoes to sauté pan and cook until ground turkey is browned, peppers are soft, and potatoes are just beginning to soften.
Add to the pot one cup of diced carrots, a 16 oz. can of coconut milk, a 16 oz. can of tomato sauce, a 32 oz. can of diced tomatoes, and 6 oz. of tomato paste. Stir until tomato paste is completely combined. Add a tablespoon of salt and one and a half teaspoons of chili powder.
Cook on medium heat for one and a half to two hours, or until carrots and potatoes are soft. Should end with a bolognese type taste.
Store in refrigerator, I used the soup for my meal preps. This amount makes about six servings. I also topped the soup with a quarter avocado. To reheat, put in microwavable bowl and set for three minutes or until hot.
Bolognese Soup
Gluten Free/Dairy Free/LowFODMAP
(Makes approx. 6-8 servings)
Ingredients:
1 lb. ground turkey
1 red bell pepper, diced
2 medium potatoes, diced
1 cup carrots diced
1 16 oz. can coconut milk
1 16 oz. can tomato sauce
1 32 oz. can diced tomato
6 oz. tomato paste
1 tbsp salt
1 tbsp pepper
1 1/2 tsp chili powder
Directions:
Sauté ground turkey with peppers and potatoes until turkey is browned, peppers and potatoes are just soft.
Add carrots, coconut milk, tomato sauce, diced tomatoes, and tomato paste. Stir until tomato paste is fully combined.
Add salt, pepper, and chili powder.
Cook on medium heat, stirring occasionally, for 1.5-2 hours or until carrots and potatoes are soft.
