Crispy Baked Green Beans
While I love a sautéed green bean, sometimes I want something different, with a little more texture. These bad boys are a true delight. Soft on the inside, crispy on the outside, a whole lot of flavor and YUM! Not quite a hidden veggie, but I remember having a version these as a kid and being MUCH more willing to eat something green.
The recipe uses two to three handfuls of fresh green beans, not frozen. Rinse your green beans and cut off the tips if needed. Then get your dunking stations ready! In a small bowl, whisk two eggs (optional addition of a tablespoon of the hot sauce of your choice here). This is dunk station one. In a bowl or on a plate, add three quarters of a cup of gluten free bread crumbs (I often use ground up plain corn or rice cereal or corn chips). The more coated you want the green beans, the finer the bread crumbs should be. Mix in a teaspoon of each: salt, garlic powder, and onion powder, and a pinch of pepper to the breadcrumbs. This is dunk station two.
Line a baking sheet with parchment paper and preheat your oven to 425. Dunk the green beans one or two at a time into the egg mixture then breadcrumb mixture. Then lay the breadcrumb coated green bean on your parchment lined baking sheet. Continue dunking until all green beans are coated.**
Place in the oven for 10 minutes. After 10 minutes, remove the sheet from the oven and flip each bean over. Bake for another 5-7 minutes or to your crisp preference.
Remove from oven and let slightly cool. Eat warm!
These are not great for meal prepping as they don’t reheat very well. Better to make and eat right away!
**If you have leftover egg mixture, save it for the next day and have some scrambled eggs for breakfast!

Makes Approx. 2-3 servings.

Optional: 1 tbsp of hot sauce
3/4 cup of GF bread crumbs
1 tsp salt
1 tsp onion powder
1 tsp garlic powder
1 pinch ground pepper
