Allergen-Free Apple Crisp
Apple Crisp was a staple in my family’s household growing up. Whether plain, or topped with ice cream or whipped cream, the smell and taste always hits me with pangs of nostalgia. I’ve tried many times over the years to find a great allergen free recreation and I’ve finally done it!
Preheat the oven to 350 degrees. Grease a 8x8 baking pan or a pie pan with dairy free butter or baking spray. Peel six apples—use whatever apples you like! I’ve made this with both honey crisp and gala apples and it was delicious both times. Once peeled, core and slice apples into quarter to half inch slices. Place apple slices in a large bowl. Add the juice of one lemon, a teaspoon of cinnamon, a tablespoon of gluten free all-purpose flour, two teaspoons of water, and a third cup of coconut sugar. Mix together. Add apple mixture to greased pan.
In a separate bowl, mix together one and a half cups of gluten free rolled oats, a half cup of gluten free all-purpose flour, and a quarter teaspoon of each baking soda and baking powder. Mix together. Add in a quarter cup plus an eighth cup of agave nectar and a quarter cup of melted coconut oil. Mix until combined.
Top apple mixture with oat mixture as evenly as possible. Place pan in oven for 30-35 minutes or until oats begin to brown. When a fork or skewer is stuck into the crisp, the apples should feel soft. Let cool on counter for 20 minutes, enjoy immediately or store covered in fridge.
Top with vanilla ice cream (dairy free or otherwise) or just eat plain!

Makes approx. 6-8 servings
Ingredients:
6 apples
1 tsp cinnamon
1 lemon
1 tbsp gluten free all-purpose flour
2 tsp water
1/3 cup coconut sugar
1 1/2 cups gluten free rolled oats
1/2 cup gluten free all-purpose flour
1/4 tsp baking powder
1/4 tsp baking soda
1/4 + 1/8 cup agave nectar
1/4 cup melted coconut oil
