Sweet Potato Crust Pizza
As a lover of pizza, but a non-eater of gluten or dairy, pizza is usually quite a sad experience. You either end up with a taste-less, cardboard-like crust with no cheese or you just opt to watch your friends indulge while you drool…
With this recipe, drool no longer! This is a quick and easy five ingredient recipe for a pizza crust, which you can top with whatever you want. As my man is usually a taste tester for various recipes—though he is a full gluten and dairy eater, he tried these pizzas and LOVED them! A total win.
Starting with four medium sweet potatoes, stab them liberally with a fork to allow steam to escape. At this point, you can then either cook them in the microwave on the baked potato setting until a fork goes through the sweet potato easily, or bake them in the oven at 425 degrees for 45-50 minutes on a lined baking tray. Once the sweet potatoes are cooked and cooled for a bit, scoop out all the sweet potato meat from the skin into a bowl. Discard the skins and mash until smooth. Add two-thirds of a cup of gluten free all-purpose flour, one egg, a teaspoon salt, and a half teaspoon cayenne. Mix together.
You can make the crusts whatever size you like, though I suggest smaller, individual pizzas since it is a wetter dough. Roll dough into a ball and then spread out onto a lined baking sheet. Bake crusts for 20-30 minutes at 350 degrees until they begin to resemble a crust like texture. Remove from oven, add toppings and cheese, then bake for another 15 minutes.
Remove from oven and let cool. Can be eaten right away or used for meal preps. Suggest reheating in toaster oven, though microwave also works!

Makes Approx. 8 individual pizzas
Ingredients:
4 medium sweet potatoes cooked
2/3 cup gluten free all purpose flour
1 egg
1 tsp salt
1/2 tsp cayenne
Directions:
Once the sweet potatoes are cooked** and cooled for a bit, scoop out all the sweet potato meat from the skin into a bowl. Mash until smooth.
Preheat oven to 350 degrees.
Add gluten free all-purpose flour, egg, salt, and cayenne. Mix together.
Roll dough into a roughly 1 1/2 to 2 inch ball and then spread out onto a lined baking sheet.
Bake crusts for 20-30 minutes until they begin to resemble a crust like texture.
Remove from oven, add toppings and cheese, then bake for another 15 minutes.
Remove from oven and let cool. Can be eaten right away or used for meal preps.
