Spicy Pineapple Chicken
Sweet and spicy are two words most people would use to describe me…or at least my recipes.
I am a huge believer in sweet and spicy food, especially proteins. Whether it’s Sriracha and honey or paprika and maple syrup, I usually find a way to incorporate these flavor profiles into my food. In planning my weekly meal prep, I couldn’t decide what I wanted, but knew I was feeling some pineapple, I’ve been in the mood lately. So I cooked up a new recipe! Meet my Spicy Pineapple Chicken:
In a crock pot, dump in two cans of diced pineapple in 100% pineapple juice (check the labels!), two tablespoons gluten free soy sauce, and one to two teaspoons Sriracha—depending on your spice preference. Mix together. Julienne one large red bell pepper and deseed and dice two jalapeños. Add to crock pot along with one pound chicken breasts—you could probably add up to two pounds of chicken here, there is enough sauce. Set on high cook for three hours. Once chicken is cooked, around two and a half to three hours, shred with two forks and add back to sauce. Mix together, serve with rice or quinoa. Can be eaten immediately or meal prepped!
Spicy Pineapple Chicken
Gluten Free/Dairy Free/Refined Sugar Free
Serves approximately 4-5
Ingredients:
2 cans of diced pineapple in 100% pineapple juice
2 tbsp gluten free soy sauce
1-2 tsp Sriracha
One large red bell pepper, julienned
2 jalapeños, deseeded and diced
1 lb. chicken breasts
Directions:
Dump all ingredients into slow cooker. Make sure chicken is submerged in pineapple juice.
Place on high cook for 3 hours.
After 2.5-3 hours, when chicken is done cooking, shred and add back to sauce.
Serve with quinoa or rice.
